Banana babies

So, it's Sunday afternoon and I have a pile of marking to do. The worst strategy reports I've ever seen - how on earth are these third year economics students about to graduate with degrees? Judging from their writing, some of them barely made it through high school.

Anyway, I thought I'd make something yummy to lubricate the process. Obligatory glass of chardonnay in hand, I scoured my cupboard to decide what to make. The blackened bananas in my fruit bowl decided for me.

I'm not generally wild about sweet things, so this has less sugar than any recipe I've ever seen. The additional bran also makes it a healthier version of any usual muffin recipe.
Sometimes I make an apple variety – with 2 peeled and roughly chopped apples and two teaspoons of cinnamon instead of the banana and cashew nuts. Both are delicious :)

(Makes about 12)
You need:

  • An egg (I borrowed one from Debbie in my complex)
  • A cup of white cake flour
  • Half a cup of bran
  • 100g butter, melted
  • 1 ½ teaspoons baking powder (if you want to make a loaf instead of muffins, reduce the baking powder to just 1 teaspoon)
  • 2 mashed bananas
  • ½ cup brown sugar
  • ½ cup cashew nuts, roughly chopped

Pre-heat the oven to 180 degrees, grease and lightly flour a muffin tray
Cream the butter and the sugar
Add all of the dry ingredients
Add the mashed banana
Add the cashew nuts
Stir with a wooden spoon
Spoon into the muffin tray and pop into the oven
Should cook for under 15 minutes. If you have an uneven oven like mine, rotate the tray after 5 minutes.
Check after 10 minutes - if a knife into one of them comes out clean (ie no batter, maybe just crumbs), then they're done.

Don't forget the Chardonnay!
